Cauli-cake? Why not! Yes, writing about food again!


I think you'll notice that I write about food a lot. I seem to take pride in cooking a "royal" meal every night for our family. Tonight I made sure our kids plates had the best garnish. A bed of lettuce, topped off with shredded cheese, a cucumber marinaded in vinegar and 5 raspberries. Beside that was brown sugar carrots, meatballs with gravy and diced garlic BBQ ed potatoes. Not everyone is satisfied with their dinner ever! I don't let the complaints bother me as I know I'm up against McDonald's! So I've come up with a plan! Disguise the dreaded asparagus, the broccoli and that white vegetable called cauliflower. Or is it a fruit? Perhaps it's a flower? Our kids often wonder and I don't blame them for the fact of it's label. Who would want to eat a flower anyways? As much as I like cooking, I like baking too. So I'm sure everyone is aware that you can hide all these ingredients in the forever loved chocolate cake or brownie! Just slightly blanch your vegetables, mash or shred and add to whatever your baking that day. You'll be surprised on how moist the cakes texture is, how the chocolate hides colors and there is no sight of any white flowers! Speaking of cakes....one of our sons had a cake walk for the year end celebration. Well....we always think "original" or at least try to be. So the night before I baked one round cake and 4 cupcakes. I was even really nice and didn't hide any moist flowering treasures in it. I did cut the round cake in half, placed the cut halves standing side by side. From there I just carved out the windshield, added the cupcakes as wheels then covered in white icing. The chocolate icing was for the windows & tires. My headlights & rear brake lights was yellow & red skittles. The masterpiece was finished and ready to enter the show n shine of the 2009 cake walk! I have to admit it, it wasn't perfect but when our son came home and that's all he talked about was the VW Beetle and on how everyone wanted to win that car, it was a walk to remember.
